Chef Bo Bech welcomes his guests with great food and wine. Eat here or invite the chef to your place to indulge your guests. Bo Bech runs Paustian from an open kitchen where he keeps his eye on the food as well as the wine being served. Try the crisp onion rings served with squid mayonnaise, puffed rice flakes with cinnamon, small fried sticks with bechamel and pork crackling with sumach spices (crushed dried berries that are acidic and salty to taste). The chef's style is full of contrasts, simple and yet elegantly.
