Pure Andalusian olive oil and sherry are the two favored staples in the El Olivo kitchen. They're used profusely to help create delicately flavored Mediterranean masterpieces. The house specialty is cod prepared in a number of different ways. Other excellent dishes include lobster salad with fine herbs, foie gras with sherry and berries and marinated sardines with tarragon. The desserts are just as inventive. As for the wines, they're mainly examples from Rioja (Bernia 86) and Ribera del Duero (Hacienda Monasterio, Viña Mayor), without forgetting the rich Amontillados and pale Finos from Jerez. The dining room is appropriately olive green with bright yellow linen.
