Mala Lahaina, HI (part of Maui Guide)

What used to be an old pineapple cannery is now Mala, an epitome of global organic fusion cuisine. It's not as complicated as it sounds. Chef Mark Ellman has his concepts straight. Keep everything fresh, quantities adequate, use organic ingredients as much as possible and use no hydrogenated oils or preservatives. These strict guidelines seem to be working. Excellent seafood (grilled opah), juicy meats (organic chicken pita salad, Kobe beef burger) and sinful desserts (caramel miranda, chocolate mousse) all wholesome and rich in flavor. Plus the seats on the deck make a great vantage point to watch sea turtles swim with the Maui sunset as a backdrop.
