Those saddened by the closing of Hilbo's Alligator Soul by Green Lake in Seattle should make the drive to this Everett spot. The decor suggests the Southern heat, or that might be the burning in your mouth. Chef Hilary Craig blends Cajun, Creole and other South-of-Southern influences to deliver gumbos and catfish plates, etouffee and ribs, all of which shine like the Mississippi on a hot afternoon. For dessert, try the bread pudding or the pecan pie. The restaurant has free parking, outdoor seating and live music from Wednesday to Saturday nights.
