The ambiance, the menu and even the name are tony at this Ritz-Carlton, St. Thomas restaurant. While the dishes are basically beef, seafood and chicken, they are tarted up with exquisite ingredients and stellar presentation. You might want to start with an organic baby greens salad served with goat cheese, cherry tomatoes, sliced melon and a passion fruit vinaigrette or move right into the entrée of slow roasted parmesan and ginger crusted rack of lamb with a bean and rosemary cassoulet.
