From the East Coast to the western United States, Joe David explores 50 destinations to tie on an apron and get hands-on learning in kitchens as varied as the renown Culinary Institute of America to a small bed and breakfast in Virginia. And with a variety of classes covered—from a culinary weekend retreat to a six-day intensive course—there’s something to peak any aspiring or leisure cook’s interest.
Pros
Each school or class is covered the same way. First, David provides an overview of the regional location where the class takes place, then he describes the instructors’ or chefs’ credentials and background, plus their philosophy about cooking.
From there, he gets into the classes in depth, giving details on class size, hours in the kitchen, what to expect and the types of foods you might cook. Programs are regularly changing, but you will get the general idea. At the end of each chapter, there’s a “facts” section filled with at-a-glance information, with costs, times and more. There’s even the skinny on local lodging. In some cases, David offers advice on other things to do in the area.
Great Tips
I love the recipes from the schools and chefs that David included. It’s not a bad idea to test a recipe from a school you are thinking of attending to see if you like the chef’s style. If you are an armchair traveler, learning how to make a gumbo (from the New Orleans Cooking Experience) or the secrets of osso buco (from Fonds du Cuisine in Michigan) will be a highlight. In addition, tips from chefs, such as how to brighten your meal like a professional (use color, practice first, etc.), what kind of pots to use and how to create wine pairings, are welcome.
Cons
I would have enjoyed some first-person anecdotes. While it’s clear the author did his homework and offers plenty of insider knowledge, the tone can be a bit dry. However, this a just nitpicky, style-usage gripe.
Worth Buying?
Yes, if food is your passion and you think getting into the kitchen on vacation is your idea of heaven, you couldn’t choose a better guide.
